Pack a picnic of poor boys, Jalapeno Potato Salad, and juicy watermelon wedges. Ingredients:
2 tablespoons nonfat mayonnaise |
1 tablespoon creole mustard |
1 teaspoon prepared horseradish |
2 (2 1/2-ounce) french rolls, split |
4 ounces thinly sliced cooked lean roast beef |
1 cup shredded iceburg lettuce |
4 (1/4-inch-thick) tomato slices |
Directions:
1. Combine first 3 ingredients in a small bowl, stirring well. Spread 1 tablespoon mayonnaise mixture over bottom half of each roll; top each evenly with roast beef, shredded lettuce, and tomato slices. Spread remaining mayonnaise mixture evenly over top halves of rolls, and place over tomato. |
