Roast Beef and Romaine Salad |

Ingredients:
1/4 cup low-fat plain yogurt |
1/4 cup light mayonnaise |
1 1/2 tablespoons lemon juice |
salt and pepper |
1/2 cup (2 oz.) crumbled blue cheese |
2 heads romaine lettuce, quartered lengthwise and cut crosswise into 1/2-inch strips (about 9 cups) |
8 ounces thinly sliced roast beef, cut into small pieces |
1 cup croutons |
Directions:
1. Whisk together yogurt, mayonnaise, lemon juice, salt, pepper and 2 Tbsp. water in a small bowl. Stir in blue cheese. 2. Place romaine in large bowl and toss with dressing to coat. Add roast beef and croutons, and toss again. Serve immediately. |
