Roast Beef-and-Blue Cheese Sandwich |

Have the deli thinly slice or even shave the roast beef to create a taller sandwich. Ingredients:
2 tablespoons nonfat mayonnaise |
1 tablespoon dijon mustard |
1/4 teaspoon pepper |
2 (2-ounce) onion sandwich buns, sliced |
2 romaine lettuce leaves |
4 tomato slices |
4 green bell pepper rings |
4 red onion slices |
4 ounces thinly sliced lean deli roast beef |
2 tablespoons (1/2 ounce) crumbled blue cheese |
Directions:
1. Combine mayonnaise, mustard, and pepper, and stir well; spread on cut sides of sandwich buns. 2. Line the bottom half of each sandwich bun with a lettuce leaf; top each with tomato slices, bell pepper rings, onion slices, roast beef, blue cheese, and top halves of buns. |
