Roast Asparagus Wrapped in Pancetta With Lemon Mayonaise |

Asparagus is one of my favorite vegetables. From Seasonal Food by Susannah Blake. I really liked the focus on whole foods. Ingredients:
7 ounces asparagus (about 10-12 spears ) |
pancetta (16 thin slices ) |
1/4 cup olive oil |
fresh ground black pepper |
1/2 cup mayonnaise |
1 lemon, juice and grated rind of |
2 tablespoons fresh dill (finely chopped ) |
Directions:
1. Heat the oven to 375 degrees. 2. Prepare the lemon mayonaise in a small serving bowl by mixing together the mayonaise , lemon juice and rind , and the chopped dill. Cover and place in the fridge. 3. Wrap each asparagus spear in a slice of pancetta. Arrange on a baking sheet and drizzle the olive oil over them. Sprinkle a little black pepper on top and roast in the oven for 6 to 7 minutes ( I cook mine about 12 minutes ) until tender. 4. Serve warm with the bowl of lemon mayonaise. |
