Roast Asparagus With Shallot Vinaigrette |

A great side dish. Ingredients:
2 lb fresh asparagus |
1/2 cup olive oil, divided |
2 shallots, minced |
2 t balsamic or white vinegar |
1/2 tsp salt |
1/2 tsp black pepper |
Directions:
1. Preheat oven to 425. Place asparagus in a single layer in shallow baking pan or jelly-roll pan. Drizzle with 2 T oil; toss until well coated. Roast asparagus 10 minutes or until tender and lightly browned. 2. Meanwhile, combine remaining olive oil, shallots, vinegar, salt and pepper in small bowl; stir until well blended. Let stand at least 5 minutes to allow flavors to blend. 3. Transfer asparagus to serving plate. Spoon dressing over asparagus. 4. 149 cal, 6g carbs, 14g fat |
