Roast Asparagus With Shallot Vinaigrette

A great side dish.
Ingredients:
2 lb fresh asparagus
1/2 cup olive oil, divided
2 shallots, minced
2 t balsamic or white vinegar
1/2 tsp salt
1/2 tsp black pepper
Directions:
1. Preheat oven to 425. Place asparagus in a single layer in shallow baking pan or jelly-roll pan. Drizzle with 2 T oil; toss until well coated. Roast asparagus 10 minutes or until tender and lightly browned.
2. Meanwhile, combine remaining olive oil, shallots, vinegar, salt and pepper in small bowl; stir until well blended. Let stand at least 5 minutes to allow flavors to blend.
3. Transfer asparagus to serving plate. Spoon dressing over asparagus.
