Rivels are essentially unformed bits of from-scratch noodles. From the Pennsylvania Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947 Ingredients:
2 cups flour, sifted |
1/2 teaspoon salt |
1 egg |
6 cups chicken broth or 6 cups beef broth |
Directions:
1. Combine flour, salt and egg; blend until crumbly. 2. Pour into boiling broth and cook ten minutes. 3. The rivels will look like boiled rice when cooked. |
