pie shells for double-crust 9 pie, unbaked |
2 cups water |
2 teaspoons cream of tartar |
1 lemon, zest and juice |
36 ritz crackers |
2 cups sugar |
butter or margarine |
cinnamon |
Directions:
1. Preheat oven to 425 degrees F. 2. Roll out bottom pastry crust and fit into 9 pie plate. 3. Break Ritz crackers coarsely into pie shell. 4. Combine water, sugar and cream of tartar in saucepand. 5. Simmer gently for 15 minutes. 6. Add lemon zest and juice. 7. Cool. 8. Pour this syrup over crackers. 9. Dot generously with butter and sprinkle with cinnamon. 10. Cover pie with top crust. 11. Trim and flute edges. 12. Cut slits in top crust to allow steam to escape. 13. Bake for 30 to 35 minutes OR until crust is golden. 14. Remove from oven. 15. Serve warm. 16. Cut into 6 to 8 slices. |
