A different version of a pecan pie that is easy and delicious. The recipe comes from the Louisiana Fur & Wildlife Cookbook. Ingredients:
3 egg whites |
1 cup sugar |
1 teaspoon baking powder |
1 cup chopped pecans |
14 ritz crackers (crushed) |
1 teaspoon vanilla |
Directions:
1. Beat egg whites until foamy, add sugar and vanilla, beat until stiff. 2. Sprinkle baking powder over crackers, mix well. 3. Add crushed crackers and pecans to egg white mixture. 4. Add vanilla, mix well. 5. Batter will be stiff. 6. Spread onto well greased 9 x 9 square pan or pyrex dish. 7. Bake at 350 degrees for 30 minutes, little less for glass dish. 8. Serve warm with vanilla ice cream, if desired. |
