I came up with this recipe one day, when I wanted something spicy and easy to make. I let everyone add their own Cajun seasoning as my daughter does not like spice. Serve with a salad and garlic bread and supper is ready in a half hour. Ingredients:
2 boneless skinless chicken breast halves |
1/4 cup olive oil |
1/4 cup chopped green pepper |
1 small onion, chopped |
1/2 teaspoon celery seed |
1/2 teaspoon cajun seasoning, to taste |
1 (28 ounce) can diced tomatoes |
1 (10 1/2 ounce) can tomato soup |
Directions:
1. Chop chicken in 1-inch cubes. 2. Fry in olive oil in a large skillet until cooked. 3. Add onion, peppers, garlic and celery seed. 4. Fry for a couple of minutes. 5. Add tomatoes, soup and Cajun seasoning. 6. Simmer for 20 minutes. 7. Serve over hot cooked pasta. 8. Enjoy! |
