made with zucchini puree broth red pepper and scallops
Ingredients:
2 cups arborio rice
1 cup red bell pepper
2 cups zucchini
1 cup onion
4 cups chicken broth
1 lb scallops
Directions:
1. saute red pepper
2. saute onion
3. add rice
4. add broth 1 cup at a time till absorbed (approx 20 min)
5. saute zucchini and onion
6. puree in blender
7. mix puree into rice, add red pepper and sauteed scallops
