Who Doesn't Love A Good Risotto... and There Are So Many Ways to Prepare It! Ingredients:
1 bunch of long green onions chopped |
2 shallots chopped |
1/4 cup of olive oil |
2 cups of aborio rice |
1/2 cup of dry white wine |
5 cups of chicken broth heated |
2 tbls butter |
1/2 cup of freshly grated parmesan cheese |
freshly ground black pepper |
Directions:
1. Saute shallots and onions in oil until brown. 2. Add rice and stir. 3. Add white wine. 4. Add 1 cup of broth and stir until liquid is absorbed. 5. Add the remaining broth 1 cup at a time stirring every time until broth is absorbed and rice is creamy in texture. 6. Remove from heat and stir in butter and cheese. |
