A favored side dish, we like it with grilled fish or chicken. Very easy and a snap to fix. Ingredients:
1/4 cup of butter |
1 small onion chopped |
1 slice of bacon diced |
1 stalk of celery chopped |
2 cups of peas |
1/2 cup diced cooked ham |
3/4 cup of rice, short grain |
1 3/4 cups of chicken stock |
1 teaspoon of salt |
1/4 teaspoon of pepper |
2 tablespoons of parmesan cheese |
Directions:
1. In a heavy sauce pan, heat butter. Add onion, bacon and celery, saute for 5 minutes, until onion is golden and bacon is cooked. 2. Add peas and 1/2 cup of ham. Cook a couple of minutes. 3. Add rice and stir well to coat each grain with some of the butter, a few minutes at best. 4. Add stock and seasonings. Bring to a rapid boil, cover and turn the heat to low and cook very slowly for 25 minutes until the rice is tender and the liquid is nearly absorbed. 5. The rice and peas should be quite moist at this point. 6. Stir in parmesan cheese and serve. 7. Pass extra parmesan to add to individual servings if desired. |
