                                                | 2 teaspoons butter or stick margarine |  | 1/2 cup chopped onion |  | 1/3 cup finely chopped smoked ham |  | 1 1/2 cups shelled green peas (about 1 1/2 pounds unshelled green peas) |  | 1 cup uncooked arborio rice or other short-grain rice |  | 3 cups fat-free, less-sodium chicken broth |  | 1/2 cup dry white wine |  | 1/3 cup (1 1/2 ounces) grated fresh parmesan cheese |  | 2 tablespoons chopped fresh parsley |  | 1/8 teaspoon black pepper |  Directions: 
                        
                            | 1. Melt butter in a large saucepan over medium-high heat. Add onion and ham; sauté 3 minutes. Add peas and rice; cook for 2 minutes. Add broth and wine; bring to a boil. Cover, reduce heat, and simmer 20 minutes, stirring occasionally. Stir in the cheese, parsley, and pepper.
