Scandinavian style Saturday lunch dish, usually served with a little sugar and cinnamon plus a small pat of butter. This version is made with brown rice, and thus more nutritious. Ingredients:
250 g rice, brown, short-grain |
1 liter 2% milk |
1 pinch salt |
Directions:
1. Rince rice in hot or cold water. Add water to cover and boil until absorbed. 2. Add 1 liter of milk- any kind. Low fat milk gives fewer calories, full fat milk or a little cream give a richer flavour. Turn heat down very low and leave for at least 30 minutes or slow cook for several hours. After the initial boiling it can also cook in a slow oven in a suitable container. 3. Stir occasionally to prevent the bottom sticking and burning. Add more milk if it seems too thick. 4. Before serving stir in salt to taste. Serve with a sprinkling of sugar and cinnamon and a little butter. You could also try a spoonful of jam, date syrup, honey, maple syrup, or sliced fruit such as banana or apple. |
