Get the day off to a great start...put together a Rise & Shine Quiche or a breakfast casserole and refrigerate. The next day, pop it in the oven for a hot, hearty breakfast with no fuss at all. I love this combination of potatoes, eggs and ham. It's tasty made with bacon and a little chopped onion too. From Gooseberry Patch Almost Homemade cookbook. Ingredients:
24 ounces frozen diced potatoes, thawed |
1/3 cup butter, melted |
1 cup shredded cheddar cheese |
1 cup shredded swiss cheese |
1 cup cooked ham, diced |
1/2 cup milk |
3 eggs |
1/4 teaspoon seasoning salt |
Directions:
1. Press potatoes into the bottom of a greased 9x9 baking pan; brush with butter. Bake at 425°F for 25 minutes; top with cheeses and ham. Set aside. Beat milk, eggs and salt; pour over cheese mixture. Reduce heat to 350°F and bake for 30 to 40 minutes. |
