Rio Grande Black Beans & Zucchini |

This is a favorite side dish that I like to serve with grilled chicken or pork chops. You can also add a can of niblet corn to this. Ingredients:
1 teaspoon oil |
1 onion, chopped |
1/2 bell pepper, chopped |
2 zucchini, sliced |
1 (4 ounce) can black olives, sliced |
1 (15 ounce) can black beans, drained |
1 (10 ounce) can rotel tomatoes |
1 teaspoon garlic powder |
1 teaspoon chili powder |
2 teaspoons cumin |
1/4 teaspoon pepper |
1 teaspoon salt |
1/2 teaspoon oregano |
Directions:
1. Saute onions & bell peppers in oil until tender. 2. Add Rotel tomatoes, mix well and cook for about 5 minutes. 3. Add black beans, zucchini and remaining ingredients, mix well and cook for about 15-20 minutes on low heat. 4. Top with shredded cheddar or monterrey jack cheese if desired. |
