Rio Grande Bean and Sausage Soup |

This is a quick and delicious bean soup from Eckrich. Ingredients:
16 ounces smoked turkey sausage, sliced |
2 (14 1/2 ounce) cans chicken broth |
1 (15 ounce) can black beans |
1 (15 ounce) can great northern beans, rinsed and drained |
1 (15 ounce) can red kidney beans, rinsed and drained |
2 garlic cloves, minced |
1 (14 1/2 ounce) can diced tomatoes |
1 small onion, chopped |
1/2 tablespoon dried oregano |
1/2 teaspoon ground cumin |
1/2 teaspoon salt |
Directions:
1. Combine all ingredients in large saucepan. 2. Bring to a boil over high heat. 3. Reduce heat, cover tightly and simmer 15 minutes. |
