My mother-in-law's stuffing recipe. An interesting variation from how my mother makes hers. This should be put together the day before you plan on cooking your turkey. This makes enough stuffing for a pretty large turkey - I used about 2/3 of the recipe to stuff my 5 kg (11 lb) bird. Ingredients:
1 loaf bread |
2 medium onions, chopped |
4 medium potatoes |
1 teaspoon salt |
1 teaspoon pepper |
1 teaspoon oregano |
1 teaspoon sage |
1 teaspoon poultry seasoning |
1 teaspoon onion powder |
1 tablespoon oil |
Directions:
1. Peel potatoes, chop into cubes, and boil until fork tender. Drain and rinse under cold water. 2. Meanwhile, dip each slice of bread briefly in a bowl of water, squeeze (should be moist, but not dripping) and break up into a large bowl. 3. Add onions, potatoes, and seasonings (to taste) together and toss. 4. Drizzle oil on top and mix well. 5. Refrigerate overnight. Stuff into turkey's body cavity just before roasting. |
