Low sodium veggie soup Ingredients:
2 cups carrots |
2 cups celery |
2 cups diced tomatoes |
16 oz tomato sauce |
2 cups onions |
2 tbs garlic |
8 oz tomato paste |
3/4 cups rice |
3/4 cups lentils |
3/4 cups macaroni (alphabets) |
2 cups kidney beans |
1 tbs red bell pepper (rub blend) |
1 tsp rosemary |
1 tsp basil |
1 tsp oregano |
2 quarts water |
1 tbs salt |
Directions:
1. Chop it all, throw it in a pot and bring to boil. After bringing to boil, turn down heat and simmer for 30 minutes. 2. I used canned kidney beans in this recipe, otherwise prep raw kidney beans to soft before adding to soup.. |
