RICOTTA WITH COCOA AND BRANDY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Coulter Estate in Fate Texas in 1982. Ingredients:
1 pound whole-milk ricotta |
1/4 cup sugar |
3 tablespoons dark cocoa plus extra for sifting over top |
3 tablespoons brandy |
1/4 cup unpeeled almonds toasted and coarsely chopped |
powdered sugar as needed |
Directions:
1. Whirl ricotta in blender until smooth. 2. Combine ricotta with sugar, cocoa and brandy then stir well to combine. 3. Refrigerate until needed. 4. To serve spoon mixture into small ice cream goblets and dust with cocoa powder. 5. Sprinkle top with toasted almonds then dust with powdered sugar. |
