simple egg and cheese tart Ingredients:
2 eggs |
1 cup part-skim ricotta cheese |
1 cup shredded cheddar cheese |
2 tablespoons salsa |
1/2 teaspoon salt |
1/2 teaspoon pepper |
9 inches unbaked pie shells |
Directions:
1. In a large bowl, beat eggs. 2. Add the cheeses, salsa, salt and pepper; mix well. 3. Roll out pastry crust into a 12 circle on a foil lined baking sheet. 4. Spread with cheese mixture to within 1 of edge. 5. Fold edge of pastry over outer edge of filling. 6. Bake at 400 degrees for 22-26 minutes or until golden brown. Let stand for 5 minutes before cuttinginto wedges. Refrigerate leftovers. |
