Ricotta Stuffed Soft Bread

This is so easy to put together and so good. I make this quite often to take for lunch. It freezes very well. You can get really inventive on the stuffing. Sometimes I add bacon or prosciutto.
Ingredients:
batter
2 cups milk
3 eggs
1 cup olive oil
1/4 cup grated parmesan
pinch of salt
1 and 1/2 cups all-purpose flour
1/2 cup corn starch
1 tbsp baking powder
stuffing
2 cups ricotta
1/2 fresh chopped parsley
1 cup pitted and roughly chopped olives
1 cup chopped sun-dried tomatoes
salt and pepper to taste
Directions:
1. Preheat the oven to 375F and line a rectangular pan with parchment paper.
2. Put all the batter ingredients in a food processor until you get a smooth batter.
3. In a bowl mix the stuffing ingredients.
4. Pour half the batter in the pan and distribute evenly the stuffing over it. Pour over the remaining batter.
5. Put in the oven for 30 to 40 minutes.
6. Let it rest for 15 minutes before cutting.
