Ricotta Shells Florentine

A quick and easy side, that is healthy and low in fat.
Ingredients:
1 1/2 cups medium pasta shells
1 cup fat-free ricotta cheese or 1 cup low-fat ricotta cheese
2 cups baby spinach
2 garlic cloves
fresh pepper
1 teaspoon mixed italian herbs
Directions:
1. Boil noodles following box directions.
2. Mix ricotta cheese, garlic, and herbs in seperate bowl and set aside.
3. Add baby spinach in the last two minutes of cook time.
4. Drain most of the water leaving small amount, add ricotta mixture.
5. Residual water will thin out ricotta mixture for a creamy sauce with the noodles.
