Ricotta pie, a traditional Italian dessert, is light yet rich. This recipe is a great source of protein. You can use it as a breakfast, protein snack or dessert. Ingredients:
3 cups part-skim ricotta cheese |
3 large eggs |
1 tsp. vanilla extract |
1 tsp. nutmeg |
1 tsp. cinnamon |
2/3 cup splenda |
1 cup fresh raspberries, strawberries, or blueberries (or all three!) |
Directions:
1. 1. Preheat oven to 300 degrees F. Spray a 9 inch pie pan with non-stick cooking spray. 2. 2. In a large bowl, combine all ingredients and beat with an electric mixer, until well combined and smooth. (About 2 min.) 3. 3. Pour into the prepared pie pan and bake at 300 degrees for 55-60 minutes. Pie will be brown around the edges and slightly jiggly in the middle. Cool 30 minutes, then refrigerate. Serve garnished with fresh fruit. |
