Ricotta Pancakes

Posting this for posterity. It's a little different than most of those that I've seen in that there are no eggs.
Ingredients:
1 cup flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon sugar
1 cup ricotta cheese
1 cup low-fat milk
Directions:
1. Mix all of the dry ingredients (flour, baking powder, baking soda, salt and sugar) together in a medium bowl.
2. Add the ricotta and milk and stir until mixed. It will be lumpy.
3. Let the batter rest about 10 minutes at room temperature.
4. Cook on a griddle or large pan over medium-high heat until golden brown on the bottom.
5. Flip pancake over and continue to cook until golden brown on bottom side and cooked through.
6. Serve with maple syrup, powdered sugar, or any other sweet topping (such as fruit).
