Ingredients:
1 cup ricotta cheese
2/3 cup milk
3 eggs, separated
4 cups flour
1 teaspoon baking powder
Directions:
1. In a small bowl, separate egg whites and beat until they form a peak.
2. In another bowl, blend the rest of the ingredients.
3. Fold in egg whites.
4. Cook on a hot, oiled griddle or pan.
5. Flip when pancake forms bubbles.
6. Roll up like crepes and serve with butter and maple syrup.
