My grandmother's recipe seems to be slightly different than the rest I've seen. I like how simple it is to make. My family traditionally serves these small pancakes with powdered sugar and homemade jam, though the traditional syrup and butter is also very good. I hope you enjoy! We tend to double or triple the recipe for larger gatherings. Ingredients:
4 eggs, beaten |
1 cup ricotta cheese |
6 tablespoons flour |
6 tablespoons butter, melted |
1 pinch salt |
Directions:
1. In a medium bow, stir ricotta cheese into beaten eggs until well blended. 2. Beat in flour, melted butter, and salt. 3. Drop by the tablespoon onto a hot, greased griddle. 4. Cook until batter is no longer runny, flipping once. |
