1 cup flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1 cup ricotta cheese |
3/4 cup buttermilk |
1 whole egg |
1 egg white |
2 teaspoons sugar |
1 teaspoon orange zest |
cooking spray |
Directions:
1. In a food processor or blender, place ricotta, buttermilk, egg, sugar and orange zest. Puree until smooth. 2. Pour into a large bowl. Whisk in dry ingredients until just combined. Batter will be stiff. 3. Coat a nonstick skillet with cooking spray. Ladle 1/4 cup batter per pancake onto skillet. 4. Cook, turning once, until golden brown. Serve warm. |
