This is a bit of a posh breakfast, great for company. Great way to use up leftover ricotta too! Ingredients:
4 slices light rye bread, sliced thickly |
1 cup ricotta cheese |
1 banana, sliced |
1/4 cup honey |
sliced strawberries (or whichever fruit you choose) or pears (or whichever fruit you choose) or orange (or whichever fruit you choose) |
coconut |
Directions:
1. Toast rye bread lightly and allow to cool. 2. Combine ricotta, banana & honey in a bowl. 3. Spread equal amounts over each slice of toast. 4. Top with fruit of your choice & sprinkle with coconut. |
