These are a different way to serve cheese for dessert..Got this one off the net. Ingredients:
8 oz. ricotta cheese |
2 eggs |
1/3 cup flour |
1-1/2 tbls. butter, softened |
1 tbls. lemon zest, grated |
pinch of salt |
canola oil for frying |
honey to garnish |
Directions:
1. In large mixing bowl, mix together ricotta cheese and eggs 2. Add flour and mix well 3. Add butter, lemon zest, and salt 4. Beat until all ingredients are well mixed 5. Let batter rest for 1 hour 6. In large skillet, heat oil 1/2 in. deep over medium high heat 7. Drop batter, 1 tbls. at a time, without crowding 8. When a light golden brown, turn over and cook other side 9. Transfer to paper towel covered plate to drain 10. Serve with honey drizzled over top 11. Sometimes, I garnish with chopped pistachios too |
