This recipe was given to me by my mother. Although I have had it for years, I have never made these cookies. Ingredients:
2 sticks butter, softened |
1 3/4 cups sugar |
2 eggs |
1 lb ricotta |
4 cups flour |
2 tsp vanilla |
1 tsp baking powder |
1 tsp baking soda |
1 tsp lemon flavoring |
Directions:
1. Mix all ingredients with an electric mixer, except flour, making sure that the ricotta is well blended and scraping sides of bowl frequently. 2. Add flour two cups at a time until well blended. The batter will be very thick. 3. Form balls, about 1-inch in diameter and put it on ungreased cookie sheet. 4. Bake in a 350 degree oven for 10 to 15 minutes. |
