Yields 7 dozen cookies. Very delicious, soft cookies. Ingredients:
2 cups sugar, granulated |
1 cup margarine, softened |
3 eggs |
2 tsp vanilla |
4 cups flour, all-purpose |
1 tsp baking soda |
1 tsp salt |
2 cups ricotta cheese (1 - 15 oz carton) |
Directions:
1. In a large mixing bowl, beat the granulated sugar and the margarine with an electric mixer on medium to high speede until combined. 2. Add the eggs and the vanilla; beat until creamy. Add half of the flour, baking soda and salt mixture and beat until well blended. Sitr in the remaining flour and the Ricotta cheese. 3. Drop by rounded teaspoons onto an ungreased cookie sheet. 4. Preheat oven to 350°F. Bake 12 minutes or until the bottom of the cookies are brown. The tops should not be brown. |
