Given to me by a Italian grandma, her advice, for proper puffiness, oil should be medium high or they won't cook right if oil is too low or too high! Ingredients:
8 oz whole milk ricotta cheese |
2 eggs |
1 1/2 tbs softened butter at room temp |
grated zest of one lemom |
salt to taste |
enough flour to bind for a thick batter |
1/2 cup honey ( topping ) |
oil to fry |
Directions:
1. Beat cheese with whisk till creamy. 2. Blend in fork beaten eggs. 3. Add peel and butter. 4. Gradually add enough flour to bind mixture into thick batter consistency. 5. Set aside for 2 hours 6. Then put at least an inch of oil in a heavy duty skillet and heat medium high. 7. Drop batter by Tbs at a time and they should puff up in balls. 8. Drain on paper toweling. 9. Place on platter and pour on the honey over fritters 10. Serve at once |
