These cookies are so yummy-very sofr and cake-like. I always get requests for the recipe when I make them. They have a confectioner's sugar glaze that you can decorate for seasons, etc. Nice cookies. Ingredients:
2 well beaten eggs |
2 c. sugar |
1/2 lb. butter |
2 tsp. vanilla |
1 lb. ricotta cheese |
4 c. flour |
1 tsp. baking soda |
frosting |
3 c. powdered sugar |
3 tbsp. milk |
1 1/2 tsp. vanilla |
1/3 c. crisco |
Directions:
1. Cream eggs, sugar and butter together. 2. Add remaining ingredients and mix by hand. Do not use electric mixer. 3. Drop by teaspoons onto lightly greased cookie sheet. 4. Bake 350 degrees 10 minutes. 5. Mix frosting ingredients and beat til smooth. 6. Cool and ice. Food coloring can be added to frosting. 7. Decorate with colored sugars or sprinkles to suit the season...while the frosting is still wet, it does dry quickly, so hurry! |
