Ingredients:
2 pound(s) (or 4 cups) ricotta cheese |
1/4 teaspoon(s) almond extract |
4 large eggs, separated |
1/2 teaspoon(s) lemon rind |
1/2 teaspoon(s) orange rind |
1 dash(es) salt |
3/4 cup(s) sugar |
1/3 cup(s) unbleached white flour |
1 teaspoon(s) vanilla extract |
Directions:
1. Preheat oven to 375 degrees F. Butter a 10-inch springform pan. Dust it with flour. 2. Beat egg whites until stiff. 3. In separate bowl, beat together ricotta, egg yolks, sugar and flour. Beat well. 4. Stir in extracts, salt and citrus rinds. 5. Gently fold in the beaten egg whites. Pour into springform pan. 6. Bake at 375 for 45-50 minutes. Cool completely. |
