This goes well with pasta or vegetable dishes. Or canbe a Main lunch dish. Ingredients:
ricotta balls ingredients |
1 pkg. frozen chopped spinach |
1 1/2 cups ricotta cheese |
2 eggs |
1 cup seasoned bread crumbs |
1/4 cup parmesan cheese |
1/4 cup chopped onion |
1/2 tsp. salt |
1/4 tsp. garlic powder |
1/4 tsp. nutmeg |
1/4 tsp. pepper |
1 tsp. basil |
1/2 cup flour ( for rolling ricotta balls ) |
sauce ingredients |
4 italian sausages removed from the casing. ( sweet or hot sausage ) |
1 onion chopped |
1 garlic clove |
1 tsp. garlic salt |
1 1/2 cups beef bouillon or 1 1/2 cups beef broth. |
1 15oz can of tomato sauce |
3/4 cup dry red wine |
1/2 tsp. oregano |
large sauce pan with 2” of water |
Directions:
1. Mix all the ingredients Ricotta balls ingredients together. 2. Form mixture into balls about an inch round and roll in flour. Place all the ricotta balls in a bowl and place in refrigerator for 1 hour or longer. 3. Sauté the sausage and onion. 4. In a medium sauce pan add beef bouillon, tomato sauce, dry wine, and oregano, bring to a simmer for 5 minutes. 5. In the large sauce pan bring the 2” of water with the garlic clove and garlic salt to a boil. 6. Drop ricotta balls in water, reduce heat to a simmer. When the ricotta balls rise remove about 5 minutes. Add them to the sauce heat for 5 minutes now it is ready to serve. |
