My mom clipped this recipe from a magazine years ago and loves it. It is the most moist cake I have ever had.
Ingredients:
2 cups all-purpose flour
2 eggs
1 (20 ounce) can crushed pineapple
2 cups sugar
2 teaspoons baking soda
8 ounces cream cheese
1/2 cup butter or 1/2 cup margarine
1 1/2 lbs confectioners' sugar
1 teaspoon vanilla
1 cup chopped pecans
Directions:
1. Cake:.
2. Mix all ingredients together by hand.
3. Pour into a greased and floured 9X13X2 inch pan.
4. Bake at 350 for 35 minutes.
5. Frosting.
6. Mix all ingredients together by hand.
7. Frost cake when cooled.
8. Sprinkle frosted cake with pecans.
