I printed a recipe today that I though I had everything for but did not. Richard said he wanted to make dinner so I washed the dishes and he cooked. This is what he came up with loosely following the recipe. This came out AWESOME! I have taught him well. :) Ingredients:
3 -6 tablespoons extra virgin olive oil |
2 boneless skinless chicken breasts |
1 large sweet potato |
2 medium red onions |
10 -12 garlic cloves |
20 -30 grape tomatoes |
sea salt |
black pepper |
basil |
italian seasoning |
1/4-3/4 cup parmesan cheese |
Directions:
1. chop potatoes. 2. thinly slice onions. 3. mince garlic. 4. cube chicken into 1 cubes. 5. half grape tomatoes. 6. add oil to warm skillet. 7. add garlic, onions and chicken. 8. saute until chicken is browned, season to taste (about 7-8 minutes here). 9. add potatoes and tomatoes and some more seasoning if you wish. 10. cover and simmer until tender about 20 - 30 minutes. 11. add cheese and ENJOY! |
