This is a recipe that I made up from several different scalloped corn recipes. It's so wonderful and I make it every holiday. If I don't I get many complaints from my extended family! Ingredients:
1 (16 ounce) can whole kernel corn, drained |
3/4 cup half-and-half |
1 cup cheddar cheese, grated |
2 eggs, lightly beaten |
2 tablespoons onions, chopped |
3 pieces whole wheat bread, chopped |
4 teaspoons butter, melted |
Directions:
1. Combine corn, half and half, cheese, eggs, onion and a dash of pepper in a 1 quart ungreased casserole dish. 2. Toss bread and butter together, spread over top. Sprinkle with a bit more cheese if desired. 3. Bake for 45 minutes at 350 degrees F or until set in center. |
