These lovely treats melt in your mouth, they simply disappear, they are so delicious, I can never seem to keep them around for even an afternoon. Come on, try them, I dare you, I double dare you! The vanilla sugar adds so much to the squares. It's very easy to make, here is a great recipe that I used ... Vanilla Sugar
Ingredients:
1 cup butter, soft
1/2 cup sugar, vanilla (or white)
2 eggs, yolks, large
1 teaspoon vanilla extract, pure
2 tablespoons orange rind
2 cups flour, white
2 1/2 cups figs, peeled and chopped, fresh
1/2 cup raisins, golden
1/2 cup coconut, flaked
1/2 teaspoon orange rind
3/4 cup sugar, vanilla (or white)
1/4 teaspoon vanilla extract, pure
1 cup water, boiling
2 tablespoons butter
1/4 cup coconut, flaked
Directions:
1. Preheat the oven to 375 degrees.
2. In a large bowl cream the butter and sugar until light and fluffy.
3. Add egg yolks, one at a time, beating well.
4. Next add the vanilla and orange rind.
5. Now slowly beat in the flour, until well blended.
6. Spread the crust batter evenly into an ungreased 13 x 9 pan.
7. Bake in a 375 degree oven for 15 minutes, remove and set aside to cool until needed.
8. Reduce heat in oven to 300 degrees.
9. In a medium size pot, add the figs, raisins, 1/2 cup coconut, orange rind, sugar, vanilla extract, boiling water and butter.
10. Boil over medium heat for about 30 minutes until the filling is thick and resembles jam.
11. Spread the filling over the crust and bake in a 300 degree oven for 10 minutes.
12. Remove squares from oven and place on rack, sprinkle with the remaining coconut, cool, then cut and enjoy!
