Rich-O's is a famous beer and pizza place in Southern Indiana that is a haven for pizza lovers. Some beer cheese is thick enough to spread. This one is thinner, suitable for dipping. Ingredients:
2 lbs sharp cheddar cheese, grated |
16oz cream cheese |
8 to 12 oz. dark beer |
1/2 tbsp garlic powder |
1/2 tbsp crushed red pepper, or less, depending on how spicy you want it. |
1 1/2 tsp cayenne |
1/2 tbsp ground black pepper |
Directions:
1. In a double boiler, melt the cheddar and cream cheese.
2. When melted and smooth, add one cup of beer and spices.
3. Stir well to blend. Add more beer for thinner texture if desired.
4. Serve with crackers, pita triangles, or crudites. Makes about a quart.
