Rich, Healthy Raisin Bran Muffins |

My parents and I love Perkins Raisin Bran muffins, but not the fat. This is a sort of remake of mine, and they taste great and are attractive to the eye. A nice load of fiber too. Ingredients:
1 1/2 cups raisin bran cereal, plus |
extra raisin bran cereal |
1 1/2 cups whole wheat pastry flour |
1 cup wheat bran |
1 egg |
3/4 cup skim milk |
1/2 cup honey |
1/4 cup brown sugar |
1/2 teaspoon salt |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1 cup raisins |
2 teaspoons oil |
Directions:
1. Preheat oven to 350. Spray a large six-miffin tin with non-stick cooking spray. In mixer beat egg, slowly adding honey and sugar. Reduce speed, add oil and milk. Add salt, baking powder and soda followed by raisins, flour, bran and cereal. Mix just to combine. Fill tins 3/4 full, and press extra cereal on top. Bake 20-25 minutes, or until knife insterted comes out clean. Cool. |
