Rich Boiled Fruitcake From Mary Killen Ingredients:
8 ounces flour |
6 ounces margarine |
6 ounces sugar |
4 ounces currants |
4 ounces raisins |
4 ounces sultanas |
1 teaspoon spices |
1 teaspoon baking soda |
1/2 teaspoon ginger, ground |
1/2 pint water |
2 large eggs |
Directions:
1. Place margarine, sugar, fruit and water into saucepan. Bring to a boil and simmer for approximately 10 minutes. Leave to cool. 2. Sieve flour, spices, and baking soda and add to contents of saucepan. 3. Beat eggs into mixture and pour into a greased and lined 7 square baking pan. 4. Bake at 160C (320F, gas mark 3) for 75 minutes. |
