Rich And Creamy Butternut Soup |

A nice winter soup that i pimped a bit..... Ingredients:
1 large butter nut peeled and chopped |
2 medium onions chopped |
2 cloves of garlic chopped |
250 ml sour cream |
500 ml cream |
500ml chicken stock |
10ml fine cumin |
10 ml fine cinnamon |
3 sprigs of rosemary |
4 bay leafs |
dash of olive oil |
knob of butter |
Directions:
1. Oven grill the butternut, rosemary and bay leafs with a dash of olive oil for about 30 minutes 2. Meanwhile fry onions and garlic in butter till nice and soft in a large pot 3. Add the cumin and cinnamon 4. Take butternut out of oven tray and mix with onion mixture 5. Through in the cream and stock and cook for about an hour 6. When butternut is nice and soft liquidize with hand blender till nice and smooth 7. Add sour cream and stir trough 8. Serve with nice fresh bread |
