Rice with Spinach, Mushrooms and Shrimp |

Easy and quick especially if using leftover cooked rice. Ingredients:
1/4 c brown basmati rice |
2 oz spinach |
2 oz sliced mushrooms |
3 oz shrimp |
1 t olive oil |
1 t sliced scallions |
1/4 t curry powder |
1 pepper to taste |
1/4 t lemon grass |
1 t gruyere cheese |
Directions:
1. Saute mushrooms and scallions in small amound of oil. Add curry powder and spinach, continue cooking until spinach wilts. Add shrimp (if using pre-cooked cocktail shrimp) and heat through. If using raw shrimp, add the shrimp to the cooking mushroom scallion mixture. Add the lemon grass and pepper. When cooked through add in the cooked rice, mix well. Plate and top with 1 T grated gruyere cheese. |
