Rice With Shredded Cabbage |

Great side dish that goes great with everything. Bursting with flavors. Greatness in this dish. Ingredients:
2 cups rice |
1-1/2 pounds white onions cubed small |
1/2 pound tomatoes cubed |
2/3 cup olive oil |
3 tablespoons pine nuts |
3 tablespoons black currents |
1 tablespoon salt |
1 teaspoon sugar |
2 tablespoons dried mint |
3 cups water |
1-1/2 pound shredded cabbage |
Directions:
1. Put olive oil, onions, pine nuts and salt in a large pot for 20 minutes. 2. Add rice and continue frying for 5 minutes stirring constantly. 3. Add tomatoes and continue frying 5 minutes more stirring. 4. Add currants, mint, sugar and 1 cup water and stir once. 5. Bring to a gentle boil then cover and cook until water is absorbed. 6. Turn off heat and let stand covered for 30 minutes. 7. Cook cabbage 10 minutes in a lightly salted water then rinse and squeeze the water out. 8. Cut in 1/2 strips then mix with rice. 9. Add remaining 2 cups water then stir once and cover then cook over low until water is gone. 10. Let cool covered then serve at room temperature. |
