1 medium onion, finely chopped |
1/2 cup oil |
1 cup rice |
3 1/2 cups water |
3/4 cup pitted mediterranean olive |
fresh ground black pepper |
salt |
Directions:
1. Soak olives in warm water for 2 hours. Braise onion in oil in large pan over medium heat. 2. Add rice and stir for a minute or two, until the rice is well covered with oil. 3. Add the water. 4. After 8-10 minutes, add the olives. 5. Finish cooking rice and allow to cool to room temperature. 6. Serve with freshly ground black pepper. |
