Rice With Lemon, Capers & Parsley |

I found this recipe on another site 4 or 5 years ago and am posting here for safe keeping. Ingredients:
1 cup white rice, uncle ben's original long grain |
3 cups water |
3 tablespoons unsalted butter, divided |
1/2 teaspoon salt |
1/4 teaspoon black pepper, finely ground |
1 tablespoon lemon juice, freshly squeezed |
2 tablespoons capers, drained |
2 tablespoons parsley, chopped |
Directions:
1. Add rice to a large pan of boiling water. 2. Cook over high heat about 15 minutes, until just tender. Watch carefully to prevent overcooking. 3. Drain and rise thoroughly. 4. Heat 1 tablespoon butter in a heavy skillet or pan over low heat. (I usually use same pan I used to cook the rice.). 5. Add rice, salt, and pepper. 6. Heat, stirring gently with a fork. 7. Stir in lemon juice, capers, and parsley and remove from heat. 8. Stir in remaining butter and adjust seasonings to taste. 9. Serve immediately. |
