Rice With Broccoli and Tomatoes |

I have been making this recipe for years and we enjoy it as much today as we did when I first made it 20 years ago! Ingredients:
2 1/2 cups chicken stock |
1 cup long-grain rice |
1 tablespoon butter |
1 teaspoon salt |
1 small onion, chopped |
1/2 lb fresh broccoli, coarsely chopped |
3 tomatoes, chopped |
ground black pepper, to taste |
Directions:
1. In a saucepan, bring the stock to a boil. 2. Stir in the rice, butter, salt, onion and broccoli. 3. Reduce the heat to medium and cook until the stock is absorbed, about 20 minutes. 4. Stir in the tomatoes and pepper to taste. |
