Rice with Broccoli and Parmesan Cheese |

Ingredients:
1/4 cup long grain rice |
1 cup low sodium, fat free chicken stock |
1 cup broccoli florets |
1 tablespoon grated parmesan |
soy sauce |
Directions:
1. Place rice and chicken stock in microwave proof dish or 4 cup glass measuring cup. Microwave on high, uncovered for 15 minutes. Add broccoli, toss to combine. Loosely cover with plastic wrap. Cook on high for 3 minutes more. Stir in cheese. Place in serving dish. Season with soy sauce to taste. |
